Daniel Nates at the Wine Bar by CMB seeks to redefine these concepts exploring a new Mexicanity by putting at the center the ancestral food, the primitive techniques of cooking with fire, smoke, incandescent stones, drying in the sun and all the ceremonial halo that our ancestors expressed in the act of eating.
For Daniel, the new Mexican cuisine is based on ingredient traceability, rich biodiversity, regenerative agriculture and creative thinking.
Thus, each dish presents elemental and inventive compositions that propose a dialogue between local producers, wild ingredients and the vast gastronomic culture of our country.
